Essential Tomato-Herb Pizza Sauce


Yes, these are simple English muffin pizzas, but what makes them blog-worthy is the ingredient underneath the cheese - the sauce. The title of this blog comes from the cookbook the recipe is from, but let us tell you, the sauce really is essential for any homemade pizza.

1 to 2 TBSP olive oil
1/4 large yellow onion, finely chopped
Two 8-ounce cans tomato sauce
1 clove garlic, pressed, or 1/2 tsp. garlic powder
1 tsp dried oregano or marjoram leaves
Salt and fresh-ground black pepper

Heat the oil in a large skillet over medium heat and saute the onion until soft and the edges begin to brown. Add the tomato sauce, garlic, oregano, and salt and pepper to taste. Bring to a low boil and adjust heat to low. Simmer, uncovered, for 15 minutes. Remove from the heat and cool. The sauce will keep in the refrigerator for 3 days, and in the freezer for up to 1 month.
