The Great Guggenheimer Salad

With it being the beginning of summer, I'm always looking for new salads, so maybe you are too. This is one of our favorites!


Arrange 4 oz. shredded swiss cheese, 1/2 - 3/4 c. walnuts, 1/4 c. Craisins, 1 chopped apple, and 1 chopped pear on large bowl of spinach (or lettuce).

Dress with the following combination: 1/2 c. white sugar, 1/2 c. lemon juice, 2 tsp. diced green onion, 1 tsp. Dijon, 1/2 tsp. salt, 2/3 c. olive oil, 1 TBS. poppy seeds or use a prepared lemon-poppyseed or raspberry vinaigrette dressing. Enjoy!

Note: I always half the dressing recipe and there's still plenty. It doesn't last too long in the fridge because of the green onions.
